“Shinriki” (Tamamizu Brewery / Miyama City, Fukuoka Prefecture) and Fukuoka Prefecture’s local cuisine <Nukamiso daki>
This sake, made from the precious resurrected rice “Shinriki,” is limited to about 1,000 bottles per year. Its subtle aroma and robust flavor go well with the region’s rich-flavored “Nukamiso-daki” dish, made by simmering blue fish (sardines, mackerel, etc.) with soy sauce, sugar, sake, and a fermented rice bran paste.
